  • hello im from Turkey.i went to England last month.i ate fish and chips with tartar sauce and mushy peas. i loved it . in theese day i wanna eat that sooo badly. im lookin for the recipes for 2-3 days.now i found what im lookin for.but i didnt understand the fish part.what kind of fish do i have to use . is anyone can tell me ?

  • @kadz88 I've heard that if the temperature of the oil you're cooking it in isn't hot enough, it will not only take longer to get golden but it will end up soggy. Maybe try a higher heat if possible.

  • @kenzfenz Worcestershire is darker in color, and it has vinegar.

  • @kenzfenz Wrong...you put malt vinegar on the chips just before eating them! Malt vinegar can be bought in most supermarkets; you'll typically find it in the 'vinergar' section.

  • It makes me cringe to watch this kind of thing on TV. The Chef is obviously one of those poncey, 'elitist', types who, having got their own restaurant in a posh part of London, decide to take it upon themselves to sophisticate and supposedly improve on a time-old traditional recipe. The main bone of contention is the fish. There's nothing wrong with a nice piece of Pollock or Haddock, or even Plaice or Skate for that. Cod is ok, too, but to say it's better is total, 'Codswallop.'

  • @exeuroweenie Absolutely. Chefs like this need to complicate simple recipes, as otherwise, they wouldn't be able to justify asking 17 pounds, (see pauls32812's comment), for something that only costs around 2-3 pound to make.

  • @JFredUK I guess their elaborations taste interesting and keep them in a job,anyway.Some of the best fish and chips this side of the pond are done at the humblest of places,a franchise called Cracker Barrel.I don't know how fish and chips,pizza,and sushi could truly be improved.I think it was Leonardo Da Vinci who said"simplicity is the ultimate sophistication".

  • @DanReborn If this programme was made by the BBC, (and, from the looks of it, is it), then cost is no object. The licence payer foots the bill, and as such, all cookery programmes and any other which buys stuff to be used on the show, have an open cheque book and get the, 'best', that money can buy. The majority of people watching at home won't use the fish featured simply because it costs too much and isn't necessarily the best, anyway.

  • I used to live by this man's restaurants in London SW3, including his short-lived fish and chip shop. It was shutdown after the posh local residents complained about it ('the smell'). It was £17 (US$28) for fish and chips but worth every penny!

  • a chip is a chunky french fry, the surface area are less, so they have less fried flavor and less oil residue on the surface saving the business one half the oil costs. they go better with fried fish because the fish is now the crunchy food and the potato can be limp or soggy for contrast. In America the Burger is the soggy moist food and the chip is super crunchy . I know my food better that most.

  • I know that Tom is doing his bit in terms of helping to market/promote Fish and Chips (albeit at his own eatery) but this attempt at Posh Fish and Chips is really pretty pathetic.

    Firstly, he could have been brave and used Haddock, Hake or even Pollock... Cod was a cop out!

    Secondly, there was no reference to the frying medium whatsoever... No authentic flavour here at all, because I can tell you now, he was not using the genuine article, Beef Dripping.. and Tom, those mushy peas, really!

    All reports refer to the norovirus, as I said, and trace the probable cause to a supplier to The Fat Duck. Not Blumenthal's fault, and he was exonerated, as I also said. These are the FACTS, as reported by every news agency in the Western world.

Also, his fat duck restaurant was criticised for its cleaning method and slow response to the fiasco.Oh, and in 2004 the fat duck failed a food and safety test " 3 out of 4 samples were unsatisfactory" Me thinks.

  • @quickfire3OOO Raw sewage from where? The oysters beds could have been compromised. I bet it wasnt leaking from his restrooms. If so then the it should have been found much earlier in order to avoid this from happening. Oysters are picked given batch numbers w/ dates / times name of the person picking them the name of the bed from which they were picked and the name of the company who picked them. Each transfer of the shellfish demands the same tracking. It is easy to find the contamination.
