This is a bit quicker than a conventional filet knife, but I've got a pic of about a 2 pounder that I did with it, and you can see daylight through the carcass, from cutting it so close to the bone. It looks like a lot of meat was left behind just using a straight cut alone the middle spine.
I have digital scales and I weigh each fish I catch. I now use a bucket and re-zero scales so the bucket is 'tared out' e.g bucket is 0.00 when I add fish. Having scales that let you 'tare' (zero) the bucket makes it easy to weigh to nearest ounce without having to 'put a hole in the fishes mouth'

great video... I kept doing the V cuts on the head and then using pliars to peel the skin.... your way is much faster.

if you cut the tail off any bottom feeder fish, hang up up and let em bleed out the meat is a lot more tasty...used to do the same with carp
