What do you do with the sauce when you turn it off? do you refrigerate it or just let it sit?

If you have hard water, use a few tablespoons of vinegar in the canner water to keep the outside jars looking nice. Dusty/hard water on the outside of the jars doesn't hurt the contents, but having them look clear is nice and easy.
