This looks lovely. What I was actually looking for, however, is how they make olive oil 'spreads' that you see in the supermarket. Are they just margarines with an olive oil base, I suppose.
I think I'll make some of this butter later on today, what with the grill season really starting up here in Norway. Such a simple yet great recipe, in my opinion. I can picture this going really well with baked or hasselback's potatoes, as a side for grilled meat. Thanks for uploading these videos, which I consider to be amongst the best culinary videos that I have come across on youtube. I find your videos to be very comprehensible, but what sets this above most others is your enthusiasm.
@ChefTips Made a slightly modified version of it, which I tried today. I added some more mediterranean seasoning such as chili, ginger and basil. I placed just under a tablespoon of this butter on a sheet of grill foil, and a nice piece of salmon on top of that, wrapped it up into a nice package, which I cooked on the grill. Worked out really well for my taste.
why do you use salted butter? wouldn't unsalted be better so that you can control the seaoning when using this with other things, like chicken in your example?

U da man! This looks great. I've never even thought to combine olives with butter. Just herbs/garlic/lemon zest to make a compound butter for sticking under chicken breast skin.
Well, butter my olives and call me a milkshake!
