They maybe for instance showdowns between two strong physical and aggressive players (like in this clip) or also 'revenge' on an opponent's player who has played dirty, usually by elbowing or tackling a 'skill player' who really plays the sport and isn't into fights. Usually all teams have specialised 'fighters' who do this kind of thing on the ice.
