  • Just made my first batch ^_^ I found that if you almost deglaze the pan with water or your boiling liquid during the reducing stage of the anko, you can improve the texture quite a bit. Anyone looking for azuki beans, whole food markets carry them!

  • @MarieFace: It's called "natural brown", "raw" or "washed" sugar. It's partially refined sugar, just a few steps away from the more common white granulated sugar. In Asia, we use this rawer sugar when we want to use something less processed (more "organic"), or cheaper. Note: This "raw" sugar has a different level of sweetness from brown sugar (which frequently has molasses added) or the really dark turbinado/muscovado sugar (which is even less refined than natural brown sugar).

  • @kpwonder15 - I don't know what you mean by can beans, but this dish needs to be made with azuki, aka red beans. Red beans are naturally sort of sweet, so if you were to use a different kind of bean like black bean, pinto bean, kidney bean, etc. it would most likely taste nasty. This recipe is also for raw beans, so if you did manage to find canned red beans, this recipe is for cooking them dried, thus all the soaking and boiling steps. Anko, the bean paste can also just be bought in a jar.

  • TO EVERYONE ATTEMPTING TO MAKE THIS: SOAK THE BEANS OVERNIGHT. If not, your beans will not be malleable even after the 30 minutes. I made the mistake of not soaking them, and I basically wasted half of my beans. I'm going to try it again with the rest of the beans, and I'll report back.

    Also, if we're ONLY making the anko, how many oz of beans should we cook?

  • I need help. I do as it is shown in the video, but my anko never comes out smooth. I also can't find a store in my area that sells premade anko. I really want to make the ichigo daifuku, but without this it's proving to be quite a struggle. any suggestions?

  • @ChitteringFiend You may not be cooking the beans long enough which will prevent them from mashing well. On the other hand, if you're still having trouble, you may want to try and put the anko in a blender/food processor while it still has a lot of water in order to make it into a puree, then carefully simmer out the water to prevent it from burning. A double boiler might be best for that method.

  • @Salinea Thanks. I'll give it a try. I found a different recipe that worked a little better, but still not all the beans mashed. I'll give the blender a try and see if that works.

  • why did mine turn out very dry and theres even a whole of a red bean in inside i thought it should be mashed and soft to eat but mine became dry and need to bite the red bean......

  • @darknessZryuu Perhaps undercooked or not enough water. A good tip they did not mention is to soak the beans overnight - that makes them easier to cook. If you deliberately mash it too thoroughly you will end up with red bean paste instead.

  • @Sephi3500 7 Oz is the equivalent of 200 grams! So, no worries!

  • @Sephi3500 Measure doesn't matter because you're not seasoning WITH the beands. You can use as much beans as you want. Seasonings, on the other hand, should be measured.

  • @likenya5 absolutely, the thing is,, it then becomes a recipe for MOCHI! mochi is prepared a bit differently, as its steamed after filling, but i guess that steaming isnt necessary if you just want to stuff the things and eat it like that. i, however, sugest steaming cause it becomes soooo much better, and fluffy<3 i hope this helped. btw, recipes for mochi are all over youtube!

  • @likenya5 That's what mochi is for-- Dango is supposed to be nothing more than a dumpling. Putiing a filling in it will just make it mochi on a stick XDD ( Besides, they're pretty small for filling... )

    Although..it takes me forever to cook the anko until soft. (3 hours+?)

  • @HINIMIT I think maybe it was 30 minutes for them because they might have soaked the beans overnight? That lessens the cooking time I think. I did not soak them overnight so I'm on hour 2 of cooking..@o@

  • @xxchocobun89xx yea but the beans may take a while since red beans take 1 or 2 hours to boil Xp. and check if the beans are soft and smooth...but its very good :) and satisfying

  • I find that the red beans usually don't become soft enough if you follow this video and will result in anko with chunks of white center of red beans. Maybe they have to be soaked before?
