So yes it doesnt have 7 sides because its not a tourne. if you notice his one cut actually makes the turnip curve in on one side making it have almost a cresent moon shape. I really don't think it is too much to ask to just simply get 7 nice sides on the turnip, while keeping a neat barrel shape.... these don't look like barrels.... and there may or may not have been 7 sides.... couldn't tell.... A customer may not be looking for perfection, but a customer is definitely wanting something that is appealing to the eye.... not some jacked up shape.

@albertuqui1 Sure it's not a "true tourne",but in our day and age customers aren't looking at how many sides their potatoes fondant have. We aren't in Escoffier's time anymore! Sure technique is a needed skill, but in the end food is about flavour, and yet there you are bitching about aesthetics
it is called a tourne, and is usually the shape of a football, however, the term has come to describe several decorative cuts derived from a bird beak knife. this could be do to the fact that the knife is commonly reffered to as a tourne knife.
