I always pick piplup because it has only 3 weaknesses but it can be taught moves that are supereffective against many different type, plus grass is not super effective, so torterra doesn't have a chance if you us drill peck a few times.

in order to evolve in Mystery dungeon Explorers or Darkness you need to beat the game and recruit Palkia on your team. then go to Luminous Spring and you can evolve.

I'm still picking Chimchar. It's a bit more difficult to get te fire starter since the first gym is Rock type, and fire Pokemon are MUCH harder to come by in the wild that Grass and Water. So much so the Flint only has two on his team, oh great fire-type specialist, nyaa.

honestly you should just choose what you like that's the best choice but if it helps any infernape is probably the best for competitive battling its fast and can sweep with physical and special attacks torterra is very good physical wall very sturdy and can dish out strong attacks but swampert is probably a better wall empoleon usage is specialized he's hard to use but he can be very good as well
