It depends.A carb bike has different jet sizes that are changeable for different needs.When you switch a carb bike's exhaust from a more restrictive stock exhaust to a freer flowing aftermarket exhaust you often need to adjust the carb and possibly change jet size to accommodate.This is almost always the case when you switch to a less restrictive air filter and aftermarket exhaust at the same time.You can run without mufflers and without air filters (at your risk)if you set the bike up for it

i love idling engines with no pipes
in fact 4 cylinders only sound nice when idling,.. i hate them revving sounds sounding like a tuned vacuum cleaner

I had a 1992 yamaha 600 the only thing I did was remove the stock mufflers and it felt nearly twice as fast and was quicker too.
All that said,be careful with short wide open exhaust You do run the risk of burning exhaust valves.
