Mini Sweet Potato Casserole and Guilt Free Fries

My mouth was watering looking at these two. I LOVE sweet potatoes! I normally eat them around the holidays while I am making pie but, I'll definitely try these two recipes.

Half and Half consist of half cream and half milk. Mostly used in coffee, baking, etc. I believe it was created for consumers who wanted a somewhat less fat alternative than using whole cream. Still has fat so the fat free version was created for weight concious individuals. If that is not available where you are you can use regular cream and it will still be good.

What is ' fat free half and half' ? This looks good, I'm going to try in next week. They would look good with some thin slices of the potato on the top wouldn't they? I make my chips like that too :D
