Heck, I can sharpen the Santoku I bought at Walmart that sharp, but the real test of quality is how long the blade will hold that edge. I'm guessing this will probably hold it longer. :D
@dsmatts true, you really need high carbon steel for a razor sharp edge. tried one of bob kramers euroline out of the box yesterday and i was prob the sharpest edge i ever used.

I also purchased a cheap chef's knife and the back end of the steel would hurt my finger. Sharpening a cheaper knife is a wonderful way to go it it is comfortable for you to handle.

The lead crisis is born from lead based paint, which has brighter colors than normal paint. Knives have no such paint on them, so why would they use lead in it?

judging the sharpness of a knife by cutting paper isn't a good way. Squid is harder to cut properly then paper, let the weight of the knife plus the edge do the work, that is when you can tell the sharpness.

Dunno bought the sharpest but it is a damn beautiful blade, and its thin convex ground made in Seki. You could certainly get it really really sharp, some of those blades from Seki are the best in the world. You could get that to split hairs if you wanted easy.

A basic sharp titanium edged blade will do. It has nothing to do with how many folds it has, what core it is, etc.

Dunno bought the sharpest but it is a damn beautiful blade, and its thin convex ground made in Seki. You could certainly get it really really sharp, some of those blades from Seki are the best in the world. You could get that to split hairs if you wanted easy.

i was watching the history channel and they said the sharpest knife there is in the world is called the diamond knife

Are u left handed? because most japanese knife are not friendly to left handed coz they sharpen one edge. i asked this cause i m left handed as well.

@Botakzai87 YES, I am lefty, but I can use either hand for most tasks. This knife is perfect for left or right hands, the shape of the handle is very comfortable.
