  • kasumi do feel nice but my misono was sharper straight out of the box, and like kasumi they're hand forged in japan, two nice knives for the price range tho. if you want something really impressive look at spending a couple of thou on a tamahagene knife!

  • Anyone who knows anything about knives will tell you that it is unimportant how sharp a knife is when it is new, the importance lies in how it is able to hold an edge. A cheap horrible knife can with care be worked up to ultra sharp, but it will dull very quickly. The value of a good knife comes from its ability to hold a fine edge despite a heavy work load.

  • @shugmcc1 yes that would be hand made and the Aztecs used obsidian in their atlatl spears and they were able to kill Spanish soldiers wearing steel armor so I'm shore the blade won't break easily

  • cutco is proven to be the sharpest kitchen, but even more important is that a knife is only as good as the last good cut. So that japanese knife might be razor sharp but come back in a year or so and its just another knife

  • VG10 is not a super steel but it is ok.

  • Heck, I can sharpen the Santoku I bought at Walmart that sharp, but the real test of quality is how long the blade will hold that edge. I'm guessing this will probably hold it longer. :D

  • @dsmatts true, you really need high carbon steel for a razor sharp edge. tried one of bob kramers euroline out of the box yesterday and i was prob the sharpest edge i ever used.

  • @cr9527 I agree, but a knife like that resists dulling extensively. It is also easier on the hands, easier to handle. There is more to it than sharpness, that is easy to accomplish with time.

    You don't need any of the fancy stuff shown here for that.

    A basic sharp titanium edged blade will do. It has nothing to do with how many folds it has, what core it is, etc.

  • @cr9527 of course. it is personal preference. I purchased a Global G-2 and pretty much fell in love with it. As I do a great deal of cutting this knife is easy to use. I also purchased a cheap chef's knife and the back end of the steel would hurt my finger. Sharpening a cheaper knife is a wonderful way to go it it is comfortable for you to handle.

    I can easily tell if it was made entirely out of lead. For one thing, it would be very soft, go dull within a few minutes of use, and very heavy.

    The lead crisis is born from lead based paint, which has brighter colors than normal paint. Knives have no such paint on them, so why would they use lead in it?

  • @cr9527 exactly my point, dumbass. chinese use inferior materials in their attempts to copy patented goods. they dump low grade products and flood markets with crappy knockoffs... such as, lead in baby formula, arsenic in noodles, mercury in meats like chicken, and oh, i don't know what else, but I am sure you can deny it all you want. hope your baby's drink the kool-ade they are selling you, but as for me and mine, fuck that dollar store imitation shit riddled with lead and whatnot.

  • @cr9527 agreed, but they use inferior steel as well. who knows what the handle is made of? maybe you think it is a composite plastic, but it is really just a mix of "recycled" crap out of a landfill. you see, the chinese have lost all credibility when it comes to anything from food stuff to clothes and other consumer goods. the whole idea of them manufacturing anything of quality is a joke. even the koreans were able to make decent cars in the past 10yrs, but china is still struggling.

    No doubt, but to cut off from all things made in China is not practical.

    I for example have a cheap knife made in China. it needs to be sharpened once every 2 months or so. Haven't had any problems with it yet.

    My computer says "Made in China" at its back, and it hasn't needed any repairs or fixing for the past 4 years.

    You get what you pay for. If you are being cheap, you will get shit quality products, it doesn't matter what country made it.

  • @shashiface I own both and they are both very very sharp, but the Shun is more brittle and likely to chip. I also like the Kasumi feel a lot more.

  • I bought this after watching this review and was kinda disappointed. I was pretty surprised with the sharpness after testing it out of the box, but after one use, it was already less sharp than my Masahiro knife that I have never sharpened.

  • @devonmale69 Interesting comment ~ Let me break it down. This thin steel knife is much sharper than my ceramic knives, but the steel knife needs honing after every few uses, the ceramic does not. That said, I prefer to own both.

  • @Indogyearsimdead Yes, if you layer it, then you get carboard the color of veal cutlette with a creamed demiglace reduction. Prepared correctly, the paper tastes just as good.

    because its been scientifically proven to have a 17 micron cutting edge, 85x narrower then a razor blade and 55x smaller then any sword,blade,cutting knife or metal based material that has been physically produced..ever. its even narrower then a legendary tamahagane sword!

    The only draw back, if you hit it on a hard surface hard enough, it will shatter.

  • judging the sharpness of a knife by cutting paper isn't a good way. Squid is harder to cut properly then paper, let the weight of the knife plus the edge do the work, that is when you can tell the sharpness.

  • Dunno bought the sharpest but it is a damn beautiful blade, and its thin convex ground made in Seki. You could certainly get it really really sharp, some of those blades from Seki are the best in the world. You could get that to split hairs if you wanted easy.

  • Are u left handed? because most japanese knife are not friendly to left handed coz they sharpen one edge. i asked this cause i m left handed as well.
