Once you hit APP, if you are on autopilot, it flies the apprach, if autopilot is off the FD, V Bar commands you and the pilot flies manually, generally speaking LOC interception if flown by autopilot and it is usally disengaged by the pilot 500RA after GS is capture as well except in cat3A aproach you use the auto land feature.

There aren't much rules for it ;). I mostly let the autopilot intercept the Localizer and after all the checklists I turn off the AP to fly a Manual Approach and landing. If I have the runway in sight just before minimums or there are much gusts I mostly let the AP do the Approach and sometimes also the landing. In Cat lll A, B and C we use the autolanding sometimes.
What type of aircraft do you fly? As far as I know from B737 pilots and from doing a course myself , the B737 is only certificed for CAT 3 A it cant do autoland till touchdown but I might be wrong. Im an Airbus pilot so I cant argue with you if you are a boeing man. What you said pretty much works for the A320 as well, we usually disconnect the autopilot when runway in sight sometimes even before on glide but its designed to diisconnect MDA minus 50 automantically.
