Flax seed are not expensive if you but them in bulk. You can get them at any natural market, or generally any store that has a bulk food section... 1.99 a lb or so. If you buy them at a supplement store then yes they will be expensive, very!
What if you use egg whites as the base to hold the materials together instead of using syrup? It has a pretty good consistency, and it handles well when you let it freeze in the fridge...

Agave nectar is as sweet as honey/maple syrup and has about the same grams of sugar it reacts the same in your cells as any sugar or sugar alcohol.
