If Sam Beam made a song exactly like this version, the same people would complain that he was copying Stereolab. To accuse him of ruining the song by playing an acoustic version is absurd. That's his style. What was he supposed to do? Both versions are wonderful. If the Iron & Wine version tried to imitate everything in this version, than it would just be the same exact song. At least he did something different and unique.

Stereolab is one of the most creatives bands ever. Iron & Wine cover of Peng!33 is awful! Repeating Gane/Sadier's song with acoustic guitar?give me break! An essential element of Stereolab is creating drones where melodies coming from Laetitias (and Mary until 2002) voice and the band travel in parallel, sometimes almost in a repetitive way but adding different sounds variations and textures that create an almost hypnotic effect. Could Mr. Beams achieved that?NO.
First of all, you should definitely keep in mind Sam Beam's rendition of Peng! 33 is a COVER. Were you expecting him to play the song just like Stereolab? Sterelab's version will forever be, but the cover is a great take on the song considering he is for the most part an acoustic artist. I'm not sure if you've listened to Iron and Wine's cover thoroughly enough, but the variation and texture you say that's lacking is definitely not at all.
Great song. Check out the Iron & Wine cover of this song. It's on an issue of Yeti. I think issue 2. It gives me chills. Sam Beam also covers a great Flaming Lips tune on it too.

Stereolab is an incredible band. If you prefer Iron & Wine, then listen to Iron & Wine instead.
Sam Beam is also incredible. But if you prefer Stereolab, then listen to Stereolab.
Or you could be open-minded and listen to both incredible artists, appreciating them for what they are and not begrudging them for what they are not.
