i looked in my local asian market and another asian store but i can't find it, i only find tamarind soup base mix, concentrate, or the actaul wet tamarind :(
@sexxyinuyasha I found it in a Chinese grocery. What I get comes in a thick, almost square bar and is not refrigerated when you buy it. It takes a bit of work to get the juice out but I think you can also buy it in a jar. I haven't seen that.
It is wonderful to see Americans cooking different types of cuisines and you did a great job! May I suggest that if your wok is seasoned (i'm not sure if yours just didn't bronze), it can really enhance the flavor of anything you stir fry. I love how you even included a traditional Thai melody to your video, keep up the great work!
@tarantula152 The thing is padthai is real easy to make, and most of the ingredients don't go bad. So I'd prefer spending money for the initial ingredients and making it myself.
Wow, not only does it look and sound yummy, but your dishes were so beautiful. I also loved the sound of the wok singing as your moved things around in it. Yummy.
I love Thai food- there is a Thai place near where I go to college and when the aromas of chilis and lime and ginger and garlic waft over to my classroom I literally start salivating! Maybe I should get checked for rabies. LOL
i should have had Pad Thai on the street when i was in Pattaya Beach but the booze and women got in the way. Ah who knows, i probably did have it, i just don't remember.
I do recall an elephant was walking down street, we hired a boat to check out the outlying islands and some guy was walking around putting monkeys on people's backs and taking pictures so he could sell them to those very same people.
oh right and the awesome nightclubs and Thai boxing right there in the bar.
We regularly eat Pad Thai with tofu out here in Northern Thailand (Issan area if you know it) especially if we have vegetarians over to visit - hard to find non meat/fish dishes.
Have you tried papaya salad? If you like pet mahk you'd love how they do it in Issan.
We're hoping to get some local women do a spot of Thai cooking here on YouTube using the local abundant ingredients - mind if I give you a shout when it happens and let them know your opinion on their dishes?

Superbly done, Master Marc. Of course, you could've left out the part where we're forced to watch you eat it in the middle of the night when we have THE BLIND MUNCHIES!!
Your wok is far too new. It's too shiny and needs work. Mine was a gift from my mother in the late 60s, the result of a request that I *must* have a *real* wok. She found one. The box it came in did not have one word of English on it.
It's dark, and old, and not pretty, and I would KILL anyone who tried to take it. :-)
You're right, Moosie, it's a fairly new wok. I bought 3 at the same time and this is the only one that I dared to use. I was an idiot and got rid of my well-used wok :-(
Looks yummy! I've never even heard of coconut palm sugar before. I occasionally use coconut oil in my cooking. Years ago most things coconut were thought of as unhealthy because of their high levels of saturated fats but that's recently been debunked and it's now thought of as being healthier than the alternatives.
Oh MARC! I am drooling, seriously!!! I am trying this one very soon! I just love Pad Thai and this recipe looks so scrumptious. I do hope I can fine the Coconut Sugar here. I want mine exactly the way you made it. Taste-buds are dancing! Yummy! Thank you for sharing this favorite!!
There are so many great versions, Michael. This is really very basic. Plain white sugar is fine (some people even use brown sugar) and you can buy the sauce so you don't need to use all of those ingredients.
