Nomura said that Square Enix is not making a FFVII remake AT THE MOMENT. But might think about it if fans are still wanting it in a few years. (he personally wants to make one right now. hahaha).
I think so too. The CGI effects do seem incredibly close to the movie. However, I'm curious as to how regular gameplay will be presented, i.e. polygon figures again, or something more like FFVIII. Perhaps Square will really impress us and improve on that feature of the game as well. Regardless, I look forward to the game's re-release, as I am a REALLY big fan of this episode in particular.

FMV Graphics seem almost as good as Advent Children! Since this isn't the real thing, surely the graphics will be way better than this.

The graphics that appear in the tech demo aren't even the FMV shots. They are in-game images.
Imagine how incredible it would as an FMV!
