One of the best episode ever. Shows a bit about what me as a chef and my cooks go through every day. So many think cooking professionally is easy like cooking at home, they take us for granted, and alot gave unreasonably high expectations. This shows people what it's like...hours of hard work in a hot kitchen, doing the best you can, cooking as fast as you can, maintaining consistency, all while getting barked at by the chef order after order and still keeping your cool....great episode!
i love this episode, it shows how much work goes into something many people take for granted, plus he showed up, got his ass kicked, and held it down...something cooks do everyday. gotta respect him for that

The restaurant industry doesn't "need" anybody. It's one of the purest meritocracies there are. If you are not good at your job you will be gone, either by being fired or because the restaurant that was ignorant enough to not fire a bad cook closed down. Mexican, American, whatever: as long as they can cook they will be welcome on a line somewhere. And if they can't it's the most obvious thing in the world.
@sdfan17: Not only that, but more often times than not, they're the most reliable workers, with the best work ethics. That's what matters to employers, NOT what color they are or where they're from. @sdfan17 exactly u are so right.even in my country the majority of restaurant workers aren't local because locals aren't willing to work the crazy hours.they'd rather be doctors or lawyers or office workers.i'm a sous-chef at my restaurant and foreign cooks show way more character compared to local cooks.local cooks tend to be more stuck-up beacause he/she feels that there is always a better job waiting for them.foreign cooks do their job well because their family income depends on it.

Wish we had prep-cooks at my work, lol. Les Halles is obviously doing well. :P.
My work is just 4 cooks for an entire day, doing all the mise-and-place, lunch and dinner. =].
Then again, smaller menu, maybe some more seats, but the size of the menu is an important factor.
