@Spykrr7 this is when he turns into Super Hoodie , Super Hoodie came back to ensure that Simon put himself in front of Curtis so that Curtis could rewind time and save everyone including himself. SH came back and basically enlisted Alisha to make sure that Simon still turned into SH once the organic catalyst was removed. SH died in the warehouse to put Alisha on a course to love Simon, Curtis would rewind Alisha's death if SH didn't take that bullet. IMO there was never an organic Simon/Alisha.

@spykrr7 This did actually happen. In Series 2 ep 3 Alisha watches the footage made in Ep 6. It had not been undone yet. This did ACTUALLY happen in Future Simon's world, and this is what made him Super Hoodie. SH came back to stop everyone from dying, not just Alisha. Getting Alisha is just icing on the cake in SH plan to have Curtis live and rewind time at the hotel and still become Super Hoodie after the rewind. There is a lot of supposition here but it is the only thing that makes sense.

@Jaymt112 This weird guy has the power to manipulate dairy products, so he suffocates his victims with any dairy product they had eaten, apart from Nathan because hes immortal, so he gets put in a vegetative state by wrapping the cheese around his brain. Watch the show, its good and you'll get more of whats happening.
