Vanilla flavoring by itself is relatively bitter. If you are going to add vanilla to the already-bitter cottage cheese, wouldn't it be clever to add SUGAR of some sort? :p

He must have been very hungry. Maybe next time have him add paprika to it (it is a sweeter, spicy than cayenne/regular red pepper) or make it into an Indian dessert. I suppose a Cajun mix would work as well, but it would be salty. One of our household's favorite ways to eat cottage cheese is on canned peaches or half a melon.

I love cottage cheese. When I was little I think I used to mix it with apple sauce. I don't know about vanilla though. XD
