Do you think a restaurant like this would work in the trendy area of a good sized mid west city in the U.S?

Maybe.. in the Silicon Valley we have a few(3 that I know of..They usually call themselves Japanese Tapas restruant) The customers are usually 60% Japanese and 40% other so probably helps to have big Japanese locals in the area.

I don't really know how to get there. I'll most probably be residing in Ikebukuro. Maybe need to take the green JR Yamanote line to Shinjuku or Tokyo to change. How to get to Saitama?

I too like Yakitori. Especially, Kashira.

The miso-dare kashira (head meat putting Miso sauce) of Higashi-matsuyama city is famous in Saitama.

I kinda feel like drinking beer eating yakitori.

I pray that I can find a few well chilled beers in the refrigerator of my home tonight. ;)
