The fish still had it's head intact to it's body and hence the brain must be functioning well, unless your spirit can go into it's brain and checked it that it's not functioning. fish don't die quick regardless of where it is residing. You can't just lop off their heads. You have to fillet the fish and then it is thrown away, so what difference does it make where it finally dies? If anything, I feel like it is more respectful to the fish to see it instead of just ignoring the fact that your food was once alive.

Scientifically, Fish are practically brain dead regarding pain and fleeing is a programmed response to stimuli because they must survive long enough to breed. Pain is actually controlled by the more primitive peripheral regions of the brain. thus the lack of cerebral cortex would preclude any higher cognitive processes that develop around the sensation of pain, such as trauma, but NOT the pain itself.
