  • I made this for my husband and he loved it! He is Italian and he was use to eating with the bread crumbs but now he really loves this way.

  • Sorry, I love most of your recipes. But I assure you that you don't wanna use any meatsauce for parmigiana, it must be regular TOMATO sauce. Greetings from Sicily

  • @gcwohltmann thanks for experimenting. I can't have meat now and really wanted to try it with Marinara Sauce. Will try this recipe on Saturday. Trader Joe's here I come. :). Will let you know how it went.

  • Excellent eggplant parm. Daughter-in-law is a vegetarian (she does eat eggs and cheese) so I used marinara sauce. I peeled the eggplant and cut the slices uniformly with a mandoline. I did use olive oil and made sure I heated the oil slowly and never more than on a medium flame so it wouldn't smoke. Everyone absolutely loved this dish. I will also try it with meat sauce, but it was excellent using prepared Trader Joe's marinara sauce.

  • I was wondering what is a cheese that could be used to replace Parmiggiano Reggiano. I live in a small city and a chuck of that is a lot of money. It was like $30 for a 8oz block. I have a 5 person family so that to much money. thanks

  • @riddiculus123 That's vegan, not vegetarian.

  • @WilliamTelevision : No way eggs are vegetarian. Only dairy products like cheese, milk etc. fall under the category of Vegan. Eggs are laid by birds so technically they fall under the category of being non vegetarian. You can look it up if u r not sure!

  • Meat sauce?? Laura, I've watched many of your videos, but I can't agree with the meat sauce.

    This dish is my favorite (yes I'm Italian, New York city) and I've been eating it for 30 years. In that time, and many EPs in many different restaurants in several different states I have never had it made with meat sauce. I'm not saying it's not good, I don't know. Just never heard of it.

  • @ChrisHat94 grazie tanto, si io sono italiana, nata a napoli, sono venuta in America 12 anni fa a vivere con mio padre, tutta la mia famiglia vive in italia. Vengo in italia un paio di volte all' anno a vedere la mia famiglia. Grazie mille per essere cosi' simpatico e spero che ti piacciono le mie ricette. I will defintely be making it this way and I do have to comment on this which I found funny...we have the same exact stove and kitchen floor!! Please keep the videos coming..I love to learn new ways of cooking favorites, especiall Italian ones!!

  • Looks absloutely delicious! When I make this dish, I always used to salt all the eggplant slices (or "degorge") but I think that's mainly reserved for the larger eggplant since the smaller ones tend not to be as bitter. Or am I completely mistaken???LOL
