I've been in a Saab 340 cockpit with Logan Air here in Scotland. How in the name do can the airline you're on fit a jump seat in that tiny cockpit? They didn't have one on Logan Air, and it still felt cramped!
All our Saabs have jump seats. It's just a fold-down chair that is attached to the flight deck door. Is there a lot of room? Nope. Is it super comfortable? Nope :)
In 705 (Airline) operations the Saab is certified to 25,000'. If it operated as a business airplane, it is certified to 30,000'.
There are two models - the A and the B. There are more powerful engines on the B model - with that in mind the A model will usually get about 250 knots TAS (True Airspeed) and the B model will cruise at about 270 KTAS.
