  • i started my fermentatiobn in a plastic carboy, can i rack it into the plastic bucket as a secondary container? also can i expose it to air to take a reading while its fermenting. Many thanks, its my first time brewing

  • I did not see you add sugar?

  • The 'kits' contain juice with enough sweetness to make just enough alcohol. No added sugar is necessary. Sometimes, for fruit flavored wines or slightly sweet wines, there is an extra juice pack that you can add at the end of fermentation. Initially, the sweet juice is needed to make alcohol, later on you can add some sweetness for taste.

  • You are right. I've been reading extensively on the subject and he's made several mistakes. A couple being 1. You don't put an airlock on the primary fermenter and 2. you top off the secondary fermenter to limit the surface area of the must, and exposure to oxygen.

  • Sorry Sir I have another question, I have waited the fermented grape juice for a week, but i see, there are many bubbles on the surface of grape juice.

    so what should i do with the bubbles (just ignore them)?? and should i wait more days for racking?

  • I'm not sure if you're kidding or not, but I'll just play along for everyone's benefit. The yeast eats sugar or anything considered sweet and converts it to alcohol. The by-product is carbon dioxide(the bubbles). The bubbles are harmless, and as the yeast dies (or stops reproducing), the bubbles stop. Rack after a week into a tighter container to prevent air (bacteria) from contacting the wine.

  • ha, that's what we call balloon wine because you can cover the opening with a large balloon, and supposedly when the balloon shrinks, the wine is done. College students do this to make cheap wine. Not that your Grandfather made cheap wine, but it's quick and easy to make alcohol...if you don't mind the taste.

  • Is it possible to just start the wine in the carboy instead of transfering?

  • I'm sure it's possible, but I've never done it. Let me know how it comes out. The only difference will be 1. the amount of sediment, oak and yeast left behind because you're not racking.

    2.The amount of oak contact time, since it's left in the wine longer.

    3. Leave the bung hole wide open because of the heavy amount of fermentation...it will spray into the air with too much constriction from the small airlock opening. Not sure what difference it will make in the taste, if any.

  • If I remember correctly (which I vaiguely remember) my grandfather used to place a plastic bag over the top of the carboy and tie it on with a piece of bicycle tire innertube. That way the gasses could slowly leak out around the edges without outside air entering. He didn't even have an airlock. I unfortunately can't remember if he did transfer it from container to container.
