  • Hina, look for a supplier on the internet who sells sucker sticks. One supplier is Sugarcraft.  Try them.

  • Hina, the type of icing I use on the cookies is Royal Icing, and it dries hard, so it doesn't stick.

    I made Shamrocks for St. Patrick's Day and they came out perfect! As a result, I got 3 orders. 2 birthdays and 1 for Easter. I was also asked about photo cookies. You go into great detail about the transfers in your EBook, but I am such a visual person. Have you ever thought about doing a video? I found a bakery that would do this for me. it wasn't cheap.

  • royal icing. Regular cake icing will not dry hard enough to package.

  • You can make your icing without cream of tartar but it won't have the same strength.

  • what do you use to apply the first coat of icing? do you use a paint brush? also does the icing have to be runny or more on the thick side?

  • I use the back of a spoon. The consistency of the icing is neither runny nor thick but somewhere in between.

  • It's going to depend on the size of cookie you make but MOSTLY I use #75702.

  • The ones I buy are 6-8" long and I can't remember the thickness exactly...sorry. I only buy them once a year and even i can't remember what I bought the last time!

    I just wanted to let you know my first attempt at making Valentine cookies was a hit! My husband took a basket to work and I took a basket to my daughter's. I forgot to take pictures except for 2 hearts on sticks in a mug.

    My piping is still a little unsteady, but I think what you say is true, you might think they don't look good as you might want, but everyone else think they look wonderful.

    Thank you again. You really inspired me to try and it was a rewarding experience!

  • i haved looked at my store for eggs that say pasteurized on the carton -no luck-but i did find the liquid i'm using it at this very min. i'm sorry i don't mean to be so thick headed about it. i always thought all eggs are pasteurized do you know if they are or not? do your eggs say pasteurized ,i have tryed the meringue (not nearly as nice as yours w/raw egg) thank you so much for your help!! i wont ask anymore about eggs lol

  • also could you tell me how long will the unused royal icing keep? do you keep it in the refig. or room temp.

  • Well, it will separate is the real issue - and it will separate whether you keep it in the fridge or not. If you're going to use it all within a day, just keep it at room temperature. Once it separates, it just never comes back together with the same texture again.

    i have seen on the web---DO NOT USE RAW EGG WHITES is pasteurized liquid egg whites safe to use?

  • I only use raw egg whiles. If you're really concerned, use meringue powder.

  • Jenny, I always thought the sticks were just groovy cool! Ha,ha! I always have a problem with the heat of my hand warming the icing. Your technique seems to minimize that problem.

  • Have you worked with royal icing?  I also find that holding a parchment bag of icing with one hand is much easier to control (and less heat) than with two hands. It takes a little getting used to, but once the technique is learned, it's easy!

  • This is not a soft cookie recipe. If you want them softer, you will have to bake them less, but again, it is not a soft cookie recipe. It is a harder cookie, perfect for shipping and also for dunking in coffee or tea or hot chocolate...
