I agree. YouTube is vast and there are many stories to tell. I'm working on a documentary as well, but as an anthropologist I'm interested in focusing on how people socialize and use YouTube to communicate. The whole copyright issue is a fascinating one.
Henry Jenkins has written a lot about copyright issues. There's a great story about how fans presented a studio with a bill for all their promotion work. If you're interested, check out my "Participatory Cultures" video with him. He talks about how misunderstandings about copyright can be found in how kids are taught in schools about how art is put together. They are not the product of a single person but are often deeply derivative of previous work.
