  • McDonald's uses 85/15 beef. Which is why homemade burgers are always juicier than those dried-out discs at the drive-thru.

  • @RogueRaven17 There's a percentage of water in butter, but it'll work for a few minutes, I bet.

  • @RogueRaven17 Well, AB did a burger ep in the first few seasons; he said that aside from a moisture barrier, the mayo interacts with the meat's juices to form a sort of sauce. I tried these, and the slight amount of mayo really does help bring out some additional flavor/texture.

    I like foster farms chicken corn dogs myself, just heat em up in oven, or better yet in deep fryer, and yum yum. No complaints, cuz deep frying zaps any subtlties anyways.

  • Presto makes a good, moderately inexpensive griddle for about 30 dollars. I got mine from walmart and I don't go a week without using it for breakfast or even steak-ums.

  • @darkprose How much of a difference is it with chuck? I never pay attention.

  • Well, the meat from the chuck generally has a deeper "beef" flavor, richer than other cuts, and at medium rare to medium, its flavor really stands out.

  • @darkprose  I like my hamburgers well done. Should I get a different type of meat for that? Should I get sirloin?

  • I would definitely use chuck. I never cared for ground sirloin for burgers, personally, and I doubt they would remain juicy if cooked past the medium stage.

  • @darkprose I like the meet island uses on there hamburger. It still taste good even well done. Do you know what kind of meet they use?

  • I'm glad Alton shows how to make a corn-dog, though if you add finely shredded white cheese to that batter you can make arepas (which you then fill with pulled pork or . . . dun dun DUN: tiny burgers!).

  • @invasivenorman Dude I only LIKE fresh corn dogs I hate the frozen crap. So I hardly eat them. It would be awesome to make corn dogs fresh. I hope my mom still has the deep frier. Hell i'll do it for myself. I am not sharing lol.

  • I'm a bit surprised that alton didn't use his lodge cast iron (2-burner reversible) griddle for the sliders. They'd be great on there. But I guess even he has to do promotional things now and then too, or maybe he was just switching things up for the fun of it. in case you're wondering, he makes philly cheesesteaks on cast iron in "tender is the loin II" and thick chuck and sirloin burgers on cast iron in "a grind is a terrible thing to waste."

  • My favorite bun for burgers is toasted english muffins. With mayo, sharp cheddar, and some tomato it's perfect.

  • I tried this recipe and it sucked. I am not sure if when I tried to tap off the extra starch it didn't come off or what, but the batter did not stick at all. Also why do we put jalapenos, onions and creamed corn... makes it too chunky. I love Good Eats, Alton Brown is my favorite Food Network chef, besides the original Iron Chefs. But this recipe just did not work.

  • Now I also tried the 99 Cent Chef recipe which can also be found on YT (He used Veinna dogs... ironic actually, but I stayed with using all beef bun length hot dogs.) and that recipe was quick, simple and tasty. Per my wife it tastes just like the corn dogs from the State Fair... and she should know, she always asks to get them plus she has worked there before.

    Regardless, I have the utmost respect for Alton and you learn a lot out side of just cooking, but the recipe did not work for me.

  • I always find it funny that people suggest that the recipe doesn't work as if they didn't make it 5 or 6 times while shooting the show and would have noticed if it was really a bad recipe
