you should never use Extra virgin olive oil for this, it has way to low of a smoking point and will add a burnt flavor to your food. you should use a high temperature oil for something like this like peanut oil.
Not exactly true. Fried rice was made in ancient China from left over and since most people were poor back then, the main ingredient (beside Rice) were veggie. Only after the dish got introduced to Western society that a lot of meat was introduced into the dish.
@xank11 The thing about fried rice is that it is very versatile. Sure, there may be your set in stone favorites, but combinations are virtually endless. In this case, the creator made his favorite version. Do realize that this is homecooking rather than in a restaurant, so the recipes are more forgiving :D
That said, I wonder if the carrots are cooked, seeing that the chunks are pretty big and 5-8 minutes is probably not enough time to cook them through o.o;
One thing I would add is that it is better if the rice is cold. Hot, still steaming rice will make the dish soggy. Best to let it sit overnight in the fridge. After all fried rice is a dish made from leftovers.
Thank you excellent video I am going to try it. One thing though David you touched everything on your counter after touching the raw chicken. It' contaminated. You need to be more careful and I know you know because you boiled the marinade. Can't help myself I'm a mother. hehe
I think he washed his hands... cause there was a transition, and if he didn't... his hands would be all sticky with the brown sugar, soy sauce, etc etc.
very very well done david. You explained everythign very well. And yes indeed it looks delicious. I assume your a very good cook and thank you for the video, i will make your recipe today and tell you how it is. Again very good video.
i wanted to ask you some questions , here they are :
1. according to me I suppose the rice really needs to Get Fried itself to get this really fried taste. i've been searching vids for it and the all of the rice that they make seems to be Like Fresh rice instead of Fryed rice .
where do you buy the sake? is it very necessary to add it?
looks very good :)

For one you have too much veggies.
You need to use about a half cup of veggies for one serving of fried rice.

Thanx a lot for the guide through!! I bought a wok about a year ago and never used it. You´ve inspired me to make some fried rice.

use a spoon to cook? You just mixed everything in a wok, that is it. It doesn't look like stir fry to me.
