I think the fact Graham cut off the Eins's arm kind of refutes that.

He only did this using the Eins' GN Beam Sabre. It only had enough residual GN particles to slice off that arm - this is why it deactivated shortly after the Eins fled the scene. This same weapon was seen when Graham attacked the Exia using his GN Flag Custom.

True enough, but I think there is still evidence that standard weapons are capable of harming a gundam. After all, there's a reason the gundams don't just walk through fields of hostile fire without needing to defend.

One of the more concrete examples is Daryl's suicide run on Lockon. Although he was in a GN drive powered suit, it was from mere impact alone that he removed the Dynames's arm, if I remember right. There are some other examples, but the gundams' performance usually prevents this

Sure, the weapons on non-GN Drive mecha do deal SOME damage to Gundams, hence the success of the massive joint military operation in the middle of the series, but, for example, a single direct hit from the IRIS Linear Rifle on the Overflag will do nothing to the armour of a Gundam (see Howard Mason Vs Michael Trinity). You need massive barrages of mundane attacks to actually damage the outer shell of a Gundam, but a direct blow of a conventional melee weapon might do it (Episode 10, re:Nadleeh).

Also, even if no damage is delt to the Gundam itself, the impact is still felt by the Pilot. Hence the reason why they have tio defend themselves. Even if 100 missiles will not damage the Gundam, the sheer imapct on the cockpit will possibily kill the pilot. Thats why Gundams punch each other......supposidly.
