I've tried this a couple of times with rice noodles. Comes out amazing. BUT, if you don't have lemon grass/ not too fond of fish sauce, tamarind soup base (like the one used for tom yum) is sooo good. :)
soooo made this and it was a fail. i went too overboard with the lime. it was good but too tangy. tried to balance it out with the fish sauce but didn't want to put too much in. any suggestions for the next go 'round?

I make this type a food a lot at home, usually to substitute for shrimp/prawns you can use tofu, some bits of steak or like someone else suggested, chicken!
It looks like you made Tom Yum! :) They actually do have a dried version of it by this brand called "Mama" But I like your recipe more that the dried stuff.

just a suggestion... shell the prawns but keep the shells and heads (crush them a little), and use it to make prawn stock for this recipe.
on a side note, you can use prawn stock for malaysian prawn noodles as well :)
prawn stock, prawns, chili oil, chili paste, water convolvulus, crispy fried shallots and the oil used to fry them in, fine chicken breast shreds (or pork), salt, sugar, yellow noodles (or vermicelli).. sorted!! :) haven't tried adding coriander in it, but think it'll work. hehe
@FS11111 We kept the shells on as it gives great flavour into the broth as you cook them... but it also makes the eating of them a bit trickier. Although a little more time comsuming your idea is brilliant. And the noodle dish sounds amazing!
@born2live These are udon noodles... not thai at all but Japanese. I prefer them and think they work better here so that's why we used them. As @TheWhatTheChannel points out we aren't doing 100% authentic but our twist on a great idea that still tastes awesome.
@solidfever Funny you should say that! My initial thought was to add it myself... but left it out as I felt the number of ingredients was expanding out of control for simple recipes. But it does taste good with a little drop! ;)
about the fish sauce, does it make the pot taste very fishy? in that case, can you use something else or how importent is the fish sauce? I don't like that typical fish taste and I don't eat fish so that's why I wonder. :P
@zubiila Fish sauce smells worse than it tastes. It provides a depth and saltiness to the dish. But instead (although different in flavour) you could use soy sauce.
without the noodle,I think this is the same way and ingredients for how to make Tom-yum-kung(thai spicy shrimp soup) anyway your thai pot noodle look so tasty. :)
I've done this recipe with few changes.. I don't really like shrimps so I used instead.. and that time i didn't had Fish souse so i mixed Garlic vinegar with sugar .. Turned out to be Awesome! u should try it (Y)

You can eat kaffir lime leave, it's good for your health. Just slice it or you can fry it to make it easy to eat!
