    TOTALLY BOGUS RECIPE !

    Pesto has-

    fresh basil

    grated goat or sheep cheese

    olive oil

    pine nuts

    garlic

    and a trace of salt + pepper

    Any other recipe is an evil-fake-nasty distortion.

    My mom never had a food processor, either, and she used a mortar & pestle. Or just chop everything up as fine as you can. Or try it in a blender.

    You can try your favorite oil; olive oil is just the traditional oil used.

  • I made a nice sandwich with pesto & mayo mixed together, smeared inside of a pita, tossed in some grilled veggies and topped it with Feta - really good.

  • interesting. Ive been making pesto for years and I freeze it in cubes. It has never turned dark. Always stays BRIGHT green

    Hi I made it and feasted on it over fresh pasta but it kind of tasted like minty salty nutty licorice sauce and pasta. I mean it was O.K. and hit the spot but did I do something wrong??

    I forgot the Garlic..

    Now I am belching Basil :)

  • I made a load of this pesto and have it frozen. After defrosting I spread it on toasted thin sliced french bread, topped with a slice of tomato. I have also popped a few in my marinara sauce. Perfect way to salvage the huge amount of fresh basil I grew this year in my garden. Thank you for the recipe and freezing tip.

    I've heard that some people don't add the parmigian until they're about to use it, because they say the cheese doesn't freeze that well.

    I've also heard of someone who adds some lemon juice so that it won't turn so dark in the freezer.

    I've never made it, so i don't know if ti works.
