  • Anyone who chooses rabbit is absolutely right. Rabbit meat is low-fat, easily digestible and has a relatively low content of saturated fatty acids and cholesterol. Recent research by the Vakgroep Dierlijke Productie of the University of Ghent shows that rabbit meat has an average fat content of 8.8%. This is good news. Food experts use a value of 10% as the limit between low-fat and fat meat types. Rabbit meat is clearly under that limit.

  • @Constavlos wild rabbits are nothing like dogs (as a food source) they are game, like pheasant, pigeon, duck, etc. that people eat everyday

    if it moves...it's game. it's just the first world that find the right to rate some species above others, with no reason behind it whatsoever. and yes, you're right, dog... infact any [other] meat is more nutritious than rabbit.

  • @Constavlos Try researching your facts... Game is a food source that requires skill, strategy, luck, or a combination of these to bag the food source. Farmed animals don't require these techniques, so aren't game, and it's nothing to do with class.

    And... rabbit is more nutritious than skinless chicken breast (one of the most popular eaten meats)

    like i said "game", exactly. though i'm pretty sure rabbit meat demineralizes your digestive system. look it up. it costs the body more vitamins to process rabbit, than the meat actually gives. plus it's meat, the human digestive system is more acidic than it is alkaline, which make digesting 'meat' even more difficult and stressful on the body. so chicken is healthier than rabbit, even with all the steroids and antibiotics.

  • @Constavlos Dogs are meat eaters. Something to consider for health reasons. Rabbits aren't.

  • If you can keep the skin and fur as in tact as possible, you can train your hounds and maybe even a smaller dog, though it would take much much longer.

  • Hi, I do a lot of rabbit hunting in the US. We have a good quantity of rabbits and hares. I would however never dare clean one in my kitchen because they are loaded with fleas. Are fleas a problem with the rabbits and hares in the UK?

    If so, are you doing something to pre-clean them before bringing them into the kitchen?

  • hi UK, I was watching this video on your site. God site too by the way. I have a question. When you are inspecting the liver what are you looking for? I know there are certain iseases and all, but could you explain exactly what to look for? Thanks. I am trying to get my son to go out and do some serious air rifle hunting w/ me. He thinks I am a wuss because I want to use an air rfle.

  • checking the liver for lumps, white spots, and discolouration (a healthy liver shows signs of a healthy rabbit)

    If I'm not happy with the liver, the rabbit is petfood ;)

    an air rifle takes a lot more skill than a bullet rifle or shotgun, because you have to get within range to make the shot count ;)

    the fur becomes toys/training toys for my dogs

    Is it me or has the rabbit population up and around the outskirt's of mixenden totally vanished ?

    Did ya kill em all haha.

    Seem's rabbit population is slowly fading away everwhere in the U.K.

  • They haven't totally vanished, but there are a few airgunners raiding the land that i've had sole permission on for years, and are hammering the wildlife.

    The locals report sightings to the police, and I've had the armed response visit me while on my permissions twice in the past 3 months because of the armed trespassers

    hope they get caught and get the full 5yrs inside, then the wildlife will be able to recover to a healthy state again that will provide a good bounty for legal hunters.

  • hey thats what they did to me in the hospital xcept for taking my skin off.they had my guts out of me laying next to me.the thought of it makes me kinda sick.but i can skin a deer,rabbit, or squirrel witrh no problems

  • That was definetly a proessional job, when i was a kid and my dad was still alive he would give me 50 pence for every rabbit i helped him skin lol, watching this brought back a lot of good memories and also put me in the mood for some rabbit stew lol.

  • why dont you paunch it in the field, i wouldnt leave the guts in for longer than neccessary, and is your lurcher hard mouthed or does it just have a really hard strike?

  • hello ukrabbiter, Before I start skinning I prefer to squeeze between the rabbit's legs to empty the bladder. Looking at your video again there seems to be a lot of messing about after you have got the skin off. For what must be the ultimate skinning and paunching video have a look at:

  • Sorry i've got say but that rabbit looks well too bruised, i think id have just left it. I shoot with an aigun and i do one shot to the head im not bragging all im saying is its not bruised in any way you have ruined the meat, good tip hang the rabbit if its bruised so the blood rushes to his head less bruising 24 hours!

  • Sorry, but this was caught by my lurcher. I also shoot an air rifle, and 99% of the time they are headshots to prevent damage to the meat.

  • Brilliant, very quick. I prefer to do it the other way round, gut then skin. I don't run the knife all the way down the belly either, just a small nick then in with the fingers.

  • heres a wee trick, if you break the neck hang the rabbit upside down so the blood flows down into the neck and head area. It will then congeal making it cleaner to cut etc. cool vid tho.

    ps have it upside down for atleast 1/2 an hour.

  • Thanks man, this really helped because I am a beginner in all forms of hunting and I am trying to gain as much knowledge as I can so Rabbit and Squirrel hunting will become a lot easier when it comes into the kitchen.

  • So, just a simple cut across the back, put your fingers in, pull apart and you can basically skin it in a couple of seconds?

    For some reason I thought skinning it would be difficult - obviously not.

  • just one question. when you inspect the liver are you looking for something specific?

  • the liver will be discoloured or have white spots/lumps if it has worms/tumors/etc

    checking the liver is a simple way of checking it's fit for human consumption

  • I use a .22 Falcon Raptor FN19 precharged air rifle

  • Well i dunno about UK rabbits or anywhere els but i grew up in the southern states an my mother always soaked the rabbits i killed in milk over night, the enzymes in the milk draw out the blood an wild taste. Plant rye grass if you want to lure rabbits to a certain area.

    I've never baited rabbits, as food is always available for them, I find learning their habits & feeding times is the best way

  • iv'e got a good tip for baiting them-you will need a hide- learn there feeding and outing times then place one or two corn on the cobs about 7 foot from there warren about 20 mins before there normal feeding times then get into your hide and wait

    A clean liver shows if the rabbit is in good health, if it has white spots, I feed the rabbit to the ferrets or dogs

  • wow... ive took a rabbits head clean off with a 50 caliber Anti material sniper rifle, but haven't done that with a rabbit yet....

  • A chef told me that steak could be greatly improved by embedding it in crushed ice for 4 hours, to draw out the blood from the meat. This might work for rabbit. I tried fried rabbit (in the style of American southern fried chicken) and it was so much better than chicken. They were white red-eyed farm rabbits grain fed. Wild rabbits have to be seriously marinated and tenderized. I tried one I shot with a bb gun, it had to be vigorously tenderized and was not the best.

  • Farm bred rabbits are usally New Zealand Whites or Giant English Whites. I used to breed these for the pot, but they don't have the gamey taste of a wild rabbit.

    Wild rabbits themselves have different tastes, a young rabbit will roast well, but an old buck is tough and is best for a stew.

  • i draw the blood out by soaking in salty water for a few hours, usually over night.

  • re: running rabbit. A rifle can do it but it would be hard. Have you used bait (like dog food or commercial bait products) to occupy the rabbits while you get a bead to shoot them?

  • In 20yrs I have shot 1 running rabbit with the air rifle.

    I've never needed to bait rabbits as they are so numerous.

  • My husband and I have been discussing raising meat rabbits for ourselves and friends, but have been unsure about the whole dressing part. This is an excellent instructional video! Just a quick question... the books and info on various websites instruct you to bleed the carcass first. I didn't see you do that. Is this a wild rabbit, or one you raised for meat?

  • A rifle allows a single headshot, leaving the meat unharmed, but is pretty useless on a moving target.

    A shotgun will stop a running rabbit in its tracks, but can leave shot in the meat.
