  • @AnOrdinaryUKGirl You add cold water to wash away the unwanted milk solids, which gives you butter that's more pure. In using cold water it won't dissolve/melt your butter if that's what you were worried about. I hope that answered your question.

  • Of course, if you don't feel like shaking, you can always use a food processor.

  • @Chilidog32 Your best bet would be to make the butter then add the salt in after the fact. A good starting point is about 1/4 teaspoon of table salt per 4 ounces of butter, but you can always just add salt to taste. Hope this helps and have fun shaking!

  • @ReasonsItrust You're free to add as much salt as you want, but a good base to work off is 1/4 teaspoon of table salt per 4 ounces of butter. So shake up your pint of cream and then salt the resulting butter till your taste buds are happy. Thanks and have fun shaking!

  • @ReasonsItrust You don't want to salt the cream as the salt will disolve in the liquid and most be poured out with the buttermilk, that would also give you salted buttermilk which sounds icky. If you have a food processer, you can whip up some butter with out all the shaking.

  • You can also do this in the food processor... in about 4 minutes. Once the buttermilk separates salt the crap out of (a lot of the salt will go out with the buttermilk.) Unless you want to save the buttermilk - then salt after separation.

  • You also need to learn to "paddle" the butter so it doesn't turn rancid from having too much milk and water left in it. This video sucks for instructions, I'll look for better.

  • Use a stand mixer like a Kitchenaid, it's a lot easier, just put the speed on slow and use the paddle mixer. You also can't use Ultra-Pasteurized cream. Well, you can, but the high heat they use to make it "Ultra-Pasteurized" makes the butter taste scalded, best to go buy raw cream from a dairy.
