The reason Hunters growl when they're stalking (or doing anything for that matter) is because they use echolocation to "see". Since they (supposedly) clawed out their eyes due to the Green Flu their other senses have become more advanced then the other infected. While the sounds can give them away at times, it can also attract the horde or even more hunters if you're unlucky...
