Pretty easy to do this, make sure the keeper is holding the ball in his hands, then go to the pause menu. you've got to swap an outfield player on the pitch (X) with an outfield player on the bench (Y). Then sub the keeper on the pitch (Z) with a keeper on the bench (SMEGRON - ran out of letters).

Then to finish, swap the new goalkeeper (SMEGRON) with one of the outfield players involved, I'm not sure which, it's been ages since I done this. I think it's the one took off the pitch, though (X).
