Use oil and you get that ugly uneven scorched texture.

Non-stick pan without oil gives you that nice uniform browning.

the reason your dorayaki looks shitty is because you used oil. I f you have a non stick pan, don't use oil and your doriyaki and pancakes will not stick and come out smooth and brown.

You're frying the pancakes the wrong way. You're not suppose to add that much oil to the pan. Add a little oil, swirl the pan around and then use kitchen towel to wipe the oil out. That way your pancakes will be evenly browned.

hey just a few pointers:

use a nonstick coated pan. thats how u get the even brown dorayaki. no spots. works like a charm everytime. no oil at all =]

and also... i use baking powder... it seems to turn out like the original doras on the bunnies head. maybe u can try it when u bored =]
