Is this your own recipe, or did you borrow it? I notice lots of peeps like to use the mustard rub, but find we don't use this method in the Deep South ... We take a spicier, sweeter approach ... give me a shout if you'd like to try it!
Yes, please buy an egg - you will LOVE it. We use the mustard rub a lot of the time. It is very convenient for the rub to stick to. Mustard is high in vinegar, so you get the "tangy" taste like Carolina style sauce. More importantly, it makes for a great crust or "bark" on the outside.
