How do you get boot picker to stay like that because on mine in 60 seconds it automaticly boots up mac

We use the same thing at EXV S.W.A.T. Productions, but the boot chime is permanently disabled so there is no sound in the morning mass boot. There are 10 rooms that contain Macs.
