i was taught that after blanching, the corn needed to be submerged in ice cold water till the cob is cold. is this an unnecessary step i can stop doing?
In other words, will it keep well enough in freezer bags for a 6 month period? I want to make sure it will remain as crisp and sweet as I can. Thank you for your reply.
@J2TKcapIRK Hello! 8-10 doz ears should do it. Quart-size freezer bags hold 2 cups each. Note how I squeeze the air out of the bag before zipping it shut--that makes a sufficient vacuum and prevents ice crystals. I then work the corn in the bag to make it flat so it freezes more quickly and makes it easier to stack and store in a refrigerator's freezer. Cheap vacuum trick: zip up bag almost to the end, insert a straw, then suck out all the air before zipping the bag shut. Hope that helps!
Hello Sir, This is my first year thinking about preserving some farmers market fresh grown summer food because winters are too long up here in NY. I am aiming for about 60 cups of corn. Does 8 to 10 dozen ear sound close? Also being new to this, my other question is how well does it keep in a regular refrigerator freezer? I do not have a deep freezer. I also see a lot of people using vacuum sealing, also I do not have. Are freezer bags good enough, or will it just grow ice crystals?
