  • i was taught that after blanching, the corn needed to be submerged in ice cold water till the cob is cold. is this an unnecessary step i can stop doing?

  • In other words, will it keep well enough in freezer bags for a 6 month period? I want to make sure it will remain as crisp and sweet as I can. Thank you for your reply. 

  • @J2TKcapIRK Hello! 8-10 doz ears should do it. Quart-size freezer bags hold 2 cups each. Note how I squeeze the air out of the bag before zipping it shut--that makes a sufficient vacuum and prevents ice crystals. I then work the corn in the bag to make it flat so it freezes more quickly and makes it easier to stack and store in a refrigerator's freezer. Cheap vacuum trick: zip up bag almost to the end, insert a straw, then suck out all the air before zipping the bag shut. Hope that helps!

  • Hello Sir, This is my first year thinking about preserving some farmers market fresh grown summer food because winters are too long up here in NY. I am aiming for about 60 cups of corn. Does 8 to 10 dozen ear sound close? Also being new to this, my other question is how well does it keep in a regular refrigerator freezer? I do not have a deep freezer. I also see a lot of people using vacuum sealing, also I do not have. Are freezer bags good enough, or will it just grow ice crystals?
