  • TELLAdaSunPEa, this recipe is great! I copied it off the video and made it for our church's holiday dinner last Wednesday. It came out creamy and smooth, not heavy at all. And the pumpkin flavor reminded me of a creamy pumpkin pie. I patted the crust on the bottom of the pan and not up the sides. I agree with JulianneLaise's post that the brown color on the sides of the cheesecake is due to the edge of the filling being cooked so it's browner than the inside part. I'm making this again!

  • @MasterPhil175 - There are a lot of video here on YT on how to make pumpkin puree - its actually very easy. The hard part is finding good pumpkins. Sugar pumpkins are supposedly the best to use, but where I live they only sell a very tiny variety, so it takes like 4 or 5. Even so, after you have done it a few times, you realize that it's not worth the extra effort. Canned pumpkin puree tastes about the same and is a lot less work IMO.

  • I like how the finished cheesecake has a crust around the outside, but when she made the crust it is only in the bottom of the pan!

  • @michelleblackmore I thought that at first too, so I backed up the video. I don't think that's crust, it's just where the outside of the cheescake got hotter than the inside. If you look at a regular cheescake the outside is a couple of shades darker than the creamy inside. I think that happened here too, but since the cake was already dark, it made the outside layer appear to be the same consistancy as the crust.

  • @JulianneLaise I've made plenty of cheesecakes and that most definitely is crust around the outside of the cheesecake. Take a look at the cheesecake at 3:00, you can clearly see the gramham cracker crumbles on top of the cheesecake, as she's running her knife around it. Take another look.

    i think most tv cooks, for time consuming dishes like cheesecake, make their dishes ahead of time, and film only the demo part. that way, they don't waste film on the actual cooking process& it ensures that the end product looks perfect.

  • @therlaehgund I understand that, but shouldn't they be showing us how to make the finished product? It does not take that long to push a graham cracker crust on to the side of a spring form pan.

  • @michelleblackmore It's all that sugar and cheese....the sugar and protein in the cheese react to form a crust. It looks great!

  • @BraidedLily No it's not the sugar and cheese! Take another look, when she takes it out of the pan and wraps it, you clearly see it has a crust all the way up the sides! I've made plently of cheesecakes and a crust does not magically appear on it's own!

  • @michelleblackmore It does look like a crust. Since she doesn't demonstrate that, I was thinking of how else the sides would become crusty. Cakes, for example, develop a crusty crumb because of the way flour and sugar interact. Paula's cheesecake has very little flour. Perhaps this was a second cake that was make before the taping?

  • @BraidedLily I made this this morning, the "crust" along the side is just browned filling. Mine turned out just like Paula's

  • @michelleblackmore It's not magic. The protein and sugar in cakes form crusts. Using a fat and flour on the pan before pouring in the batter also helps make the sides crusty. It just looks very crusty, though. :)
