what kind of wine should be used for the most flavor? I know it's personal pref however the answer takes away the guess work for me.

@bodhronii A full-bodied wine such as merlot would work well for a braise. The key, as he said though, is to use the same wine you will also be drinking with the meal. If you prefer a less intense red though, this would also work for the dish.

He's the first chef I've ever heard use the expression (I use) "high note." Braising adds a lot of depth, but the ultimate product can taste a little flat. I think the hee hee was a brilliant idea.

Mario Batali is so awesome. He really knows italian food and how many chefs claims to make italian food and it's typical american version of what is supposed to be italian.

Mario is a far much better cook than Emeril. He does not horse around and shows more of the cuisines, especially from Italy. Emeril is all show and yelling and still has errors like undercooking all his meats to new levels below "raw". He put the rare in rare! He is all fame because of "Bam" etc. Mario goes deep into real culinary food.
