@crociato81 For 100g, I would use at least 8oz of water. Probably 10-12oz. For rice milk, it's less important to get the ratio of water to rice exact, but I would recommend using more water than you would normally use to cook the rice. The rice should be nice and soft.

You can really use any kind of rice you like, though; jasmine, basmati, short grain, long grain, sushi rice. Sorry it took me so long to get back to you on this. I saw the comment and then forgot about it. I'll have to get back to you on the protein content, but in rice milk it's not going to be much. If you want a vegan milk with significant protein content, try soy, almond or cashew milk.
