Hi, what is crystallized ginger? Why did you use that over fresh ginger?

Crystallized ginger is the same giger strips you get ata Sushi bar, its not as strong or as over powering as fresh ginger... much easier to use as well...

@vikaleeanessa I adore fresh ginger.I like to slice it thin or chop it up and toss in my chinese chickens salads.
