Protip: you actually should crack your eggs on a flat surface instead of the rim of a bowl that way there's less risk of pushing the shell into the egg and breaking the yolk.

I'm go to a cooking school, and I've learned that when you take butter and flour, together, and are about to add the milk in, you take the boiler off the heat for some seconds, add milk while you quickly stirring in the boiler, then you will avoid the lumps you got there :)

@gopherdude Yeah, I did try it... but it was really boring so I changed a lot around and in the end it wasn't even remotely similar to the original recipe. Might be interesting as a side dish for something, or as part of a starter. Avocado/salmon toast with some potage le magnifique sounds like a good starter ;)

Ounces in cooking always means fluid, ie volume. It'd be really annoying to cook and have to actually weigh stuff. I've never even seen a recipe use ounces in the first place though. Also if you break your eggs on a flat surface rather than the edge of a bowl you'll never run the risk of getting little bits of shell in the egg!

As far as I know, you add milk slowly at first, and when it has been diluted a bit, you can add the rest without fear of getting lumps.
