I think it's funny that Tony begins eating sushi to improve his health. In another scene, he is shown at the same restaurant with an enormous plate of sushi in front of him, covered with sauces and toppings that make the sushi about as healthy as a Big Mac. Tony is a shark that devours everything in his path - food, people, money, etc - and nothing can stop him (not even Tony himself).
