@KyYITBOS I wasted a big pile of cash on them Cutco knifes and sure there not bad but not good on bone at all, they do have a place, they offer free sharpening but you pay more for shipping then you can get them done local or do them my self, the edge do not last at all

@Nickodemusodurn I had a friend once tell me I cheated by using a modern firearm while hunting whitetail and I asked him if he had tried it and of course no he hadn't.
@scooterguy1234 So take your scooter to Burger King or Publix and thank the butcher for doing your "dirty" work. If you are a vageterian, do that and don't interfere with the omnivores!
his demonstration of how to debone the front shoulder has now allowed me to cut a lot of time off my process time AND I can glean better cuts of meat from that area which was always a challenge for me as well as time consuming! THANKS FOR SHARING YOUR SKILLS
Very helpful and detailed video, but why debone the shank like that? Wouldn't it be ideal to braise the shanks bone-in, either whole like lamb shanks or in chunks like veal (osso bucco)? Seems a lot nicer than throwing the shank meat in with the stew/ground. But I guess you could just use the saw to prepare it like that, cutting just above the knee I imagine?

We have been taking our deer to a processor and paying 70 dollars a pop, we found out today that they have been taking meat from everyones deer for themselves ,so we are gonna start doing this ourself. The knife that was used is a 5 inch curved stiff boning knife made by Gieser. Victornox is a more common brand and should would just about as well, but the blade is more brittle.

This is very much a form of art.
Most people these days feel that meat just comes from the grocery store, and skilled butchers like yourself are few and far between.
To be able to do this like you do, with such precision, takes great skill. And the meat produced is beautiful. Kinda like art you see in galleries.
