  • Most forget to add that the amount of lemons you use is entirely up to you. The more you use the more flavor you get. You can't screw it up. I would also experiment a little and add some Rose Lyme juice to it when your going to pour. ... a little sour mixure.

  • Great video. Concise, explains all you need. I wish more people understood that on youtube. Having made gallons of this stuff I can only agree with Octothorn, no white pith!  Just the yellow zest, so make sure you have a new peeler, it makes all the difference as it will let you shave off just the good stuff.

  • Terrible recipe. He forgot to mention you can NOT allow ANY of the white pith to be on the lemon peels before they are added to the alcohol.

    The white lemon pith is full of horrible bitter chemical salts that will ruin your limoncello. Do not just peel the lemon, you need to zest it. Zest carefully, and get NONE of the bitter pith, and you will have a wonderful limoncello.

    Get too much pith and you will have a crass undrinkable lemon flavoured bitter syrup.

  • @octothorn Exactly, I've been through about ten of videos and not one of them actually considers making the final product into something you'd enjoy vs. buying a cheap limencello at the store.

    The last limencello I made used Russian Standard Platinum as a base and used about 1/3rd of the sugar most of these recipes called for. It also had small amounts of orange rind and honey to accent it. You might as well make it your own limencello if you're going to do it at home, and do it wel!

    Further to my previous comment, I would like to add that it really is unnecessary to soak the lemon zest any longer than 2 days.

    We really are only after the lemon oils, and after zesting the peel those oils will easily mix with the alcohol.

    Soaking the zest for a month the way he suggest is just silly - you don't get anything more out of it after the first day or so.

    Yes. Completely. In fact the less pith the better the final result.

    The very bitter compounds in the pith are a type of salt that is strongly detectable by the human tastebuds, we can taste them even at very low concentrations.

    This video is evidence that the author can write a book without really understanding the subject material.

  • Is it possible to use 95% ethylene alcohol from the pharmacy? Y'all connoisseurs out there want a "clean," flavorless, dry drink.   • Vodka has flavor so it is not good to use. the best way is with Everclear. everclear is pure Grain with no flavors you want thi proof so when you add the simple syrup you can bring it down to around 80 proof or 70 proof.

  • The people complaining about how long it takes obviously haven't tasted real limoncello before.

    And no your standard 40% or 80 proof vodka won't work that well. You should be able to find 151 proof just about any state. Ideally you are using 95% grain alcohol which is different from vodka.

    The one and a half ounce syrup measurement is WAY off too. You want to end up about 80 proof AFTER adding the syrup so about 1:1 if you are using grain alcohol, but you can adjust to your taste.

  • @EnvisionWoW that is not fermentation there is no yeast so there is no fermentation. the alcohol is just pulling the essential oils and flavors out of the lemon zest.

  • no alcohol is being fermented in this video. fermentation is making alcohol (the conversion of sugar to alcohol and CO2). He uses existing alcohol (everclear) to make the limoncello. It takes a month simply for the flavors of the lemons to mix with the alcohol.

  • @anozir He's making liquor, not alcohol. You need to know the difference between an ingredient and the food that ingredient is in. Alcohol is a drug found in drinks, Liquor is the name of these drinks. You make LIMONCELLO, as the title suggests, by flavoring ALCOHOL. He didn't say he was making alcohol at any point during this video. When someone says they are making tea, they don't mean growing and harvesting plants. They are taking ingredients already provided and brewing them into a drink.
