It's not frozen, tuna are just fish that are able to swim so fast because they hold their body still and move with their tail only, they don't need to be flexible. Plus the special red tuna meat might have to do something with it as well...don't know :)

You can't actually believe that someone would freeze a world record yellowfin tuna, somehow get a 7 foot frozen tuna out to the fishing grounds IN A PANGA, then throw it the water just to give you a few seconds of the fish being pulled on board! You must be really dense. The fish fought the spear for an hour then died, you would probably be stiff too.
