No offense, but this is an example of how just anyone can post a video. There are much better ways to cook a roast. If anyone wants better directions on my version posted in the comment, I will personally email them a recipe that you will use over and over. You literally need a couple of wide spatulas to pick it up, as the meat is so tender that it will fall apart. Plus, if you add a bunch of red wine to something like a roast, it could over power the taste and ruin it all.
Buy a nice chuck roast. (3 - 5lbs) Season with Kosher or sea salt and some coarse black pepper. Sear (brown) each side in a hot skillet, grill, etc to hold in the juices. Next, put roast in a pan and add enough beef broth to cover 30 to 50% of the meat. Seal with foil and cook at 325 for 2 hrs. Reduce heat to 275 & cook 3 more hrs. Remove & toss veggies in flour & add more broth. Cook for 1 hr more. Flour on veggies helps thicken broth into a nice gravy & the meat melts in your mouth.
That sounds about right. Its important to cook the roast at a low heat or it will be tough .. be patient and expect it to be cooking for about 5 hours minimal.. too many people try and cook it at 350 for 2 1/2 hours and you got yourself a boot. I make my roasts in a 8 quart pan that is safe for the oven.. season it, sear it on the stove .. add your liquids..and braise it. I like to add my carrots a little before the potatoes because they take longer to cook.
if you have a dutch oven rogerely's recipe will only get better. I usually just salt and pepper a roast, sear it in my dutch oven with garlic and onions, then cook it slow. 3 hours for a 4 lb chuck roast is about right. I add the vegetables based on cooking order, carrots and potatoes take more time than green beans or snow peas. It isn't rocket science.
Hack.. Expert Village should be Village Idiot. Minimal instruction at best, they shouldn't waste anyones time. Not specific on anything at all.. did they sear the meat?: Maybe..but why mention it. Hacks
Not the method I'd recommend. That looks like an Eye of Round which takes forever to tenderize. As for his name - who gives a shit? It sounds fat! He reminds me of a fat neighbor who did noting but set around with his fat wife and eat all day and abuse Vicodin.
