A messy delight! I'd use a knife and fork. The mustard is a winner, and if I have cold cooked potato, I add some, peeled and finely diced. It's a great extender. This is good because you can do just one egg or many! I sure wish I could find alfalfa sprouts in France. I have to find organic seeds and sprout my own, I should be doing this anyway. Fantastic! One egg has all the vitamins and minerals we need per day. Starving people are given one egg per day to help save them, I have heard.
@pastryparrot1 You can make a nice salad on a plate with potatoes, chunky. The French will not eat egg salad sandwiches! Stubborn people. For a sandwich, potatoes chopped very fine are a GREAT extender! xo
@BeyondBracelets Eggs are pretty expensive here in France. Potatoes can be gleaned for free or if you buy from the greenmarket and are careful, can be a bargain. The potatoes make it a little more solid, less mushy. If for a salad, you leave them a bit larger, but for a sandwich, chop 'em fine. Her adding the mustard is the secret, and a little something salty. My spouse hates capers but does eat anchovies. We put an anchovy or two on the sandwich back in NY to zip it up!

@crissala Capers are a little unripened flower bud that is brined. They have a lemony, tangy flavor and are delicious. They go great with egg salad.
